The friendliest of The Hitch Mobile eatery food trailer folks in San Marcos have to be Bruce and John of the Caboose. As we went back by each food trailer to say how much we enjoyed the food and tell them about Tastes Like Travel, the Caboose welcomed the conversation. Of course the bee that was scaring the daughter gave them a laugh too!
We could tell that Bruce and John are passionate about their food trailer fare and were very knowledgeable. We had ordered the crab cakes, with hush-puppies and fries from them earlier. Everything comes with their special sauce, a secret recipe we could not extract from them. It does start with a spicy ranch dressing, and whatever they add to it gives it just the right amount of heat and sweet to dip everything into. And we did!
The crab cakes were excellent, perfectly fried, light and crisp! So many times a crab cake is made with ground up crab meat with too much other stuff that over powers the crab. But these had nice chunks of crab meat that you could see. And the hush puppies were so good, with chunks of onion, they are better than what Momma used to make!
John made us a sample of their funnel cake, drizzled with raspberry sauce, vanilla cream and dusted with powdered sugar. The cake was light and crispy and the combination of flavors was heavenly! I’m not sure if they have more than one fryer, but the flavors of the other foods did not carry over to the funnel cake. I know this will be sacrilegious to some, but their funnel cake is better than anything I have had at the State Fair of Texas!
It is amazing that these guys can make so many food items out of their little red caboose food trailer. Tastes Like Travel will return soon. Looking forward to trying the fried pickles, calamari, frog legs and other delectable’s!
